Super Easy Scones

Ready in less than 30 minutes! Lots of options for add ins. Amazing texture. Vegan. Delicious.

The texture of these scones are amazing: moist and almost biscuit like!

Other mix ins that would be tasty include chocolate chips, nuts, dried fruit, blueberries.


Ingredients

  • 2 1/2 cups all purpose flour

  • 1/4 cup sugar

  • 1/2 tsp salt

  • 1 tbsp baking powder

  • 2/3 cup milk (I used unsweetened almond milk)

  • 1/2 cup coconut oil (hard, not melted)

  • Mix ins! (I used 1/2 cup frozen raspberries)

Optional Glaze

1/2 cup powdered sugar

1 tbsp milk

1/4 tsp vanilla extract


Directions

1. Preheat 415°F

2. Mix flour, baking powder, and salt in a bowl.

3. Add hard coconut oil in and rub it into the flour mixture using your hands until there are no large chunks of coconut oil and it looks like fine crumbs.

4. Add sugar and mix.

5. Add milk and stir with a large or wooden spoon until dough forms.

6. Put dough on counter and add mix ins on top. Knead the dough gently to incorporate mix ins. Knead until it all comes together into a ball.

7. Break apart 8 equal balls of dough and place separated on a sheet pan or in a scone pan.

8. Bake 14-15 minutes or until starting to brown. (mix glaze ingredients together in a separate bowl until smooth.)

9. Allow to cool before removing from pan.

10. Once cooled, add glaze if desired. Enjoy!
