Mom's Maple Granola

Free of added sugar, gluten, and dairy. Extremely flexible recipe full of protein, fiber, and that feeling of being at home.
This recipe is not named after my mom (although this is one of her favorite things I make). Rather, this recipe is dedicated to moms because, just like a mom, this granola is extremely flexible! It can go with the flow. If there's some spilled milk (or swapped ingredients) it's not the end of the world.

Apart from being over priced, store bought granola is often full of sugar.

Makes about 6-7 cups granola
Ingredients
3 cups oats
½ cup shredded coconut
[A total of 2 1/4 cups nuts/seeds. Any combination, but I like…]
1/2 cup almonds
½ cup cashews
½ cup walnuts
¼ cup pecans
¼ cup pepitas
¼ c ground (or milled) flax seeds
2 tbsp cinnamon
1 teaspoon salt
½ c honey (or agave instead of honey and syrup)
½ c maple syrup
2 teaspoon maple extract (or vanilla)
Note: If you don’t have maple extract, get some! Personally, I replace vanilla extract with maple in just about every recipe between the months September and December. This granola is delicious with vanilla extract instead of maple, but maple syrup doesn’t actually add that much maple flavor, so I would highly suggest the maple extract! It’s worth the buy!

Directions
1. Preheat over to 300°
2. Mix all dry ingredients.
3. Add wet ingredients and mix well.
4. Spread evening on a baking tray.
5. Bake at 300° for 25-27 minutes for soft granola. 30-32 min for crunchy.
6. Let cool before stirring.
(It will get crunchier as it cools! If you stir before it is cooled, you will end up with a bunch of little pieces, and if that’s your thing, great, stir away. If you want big chunks of granola with some little pieces, gather up your will power to wait and wait until it cools to stir! Don’t worry, you can still snag a chunk to try before stirring.)

In a bowl with banana and milk
On top of yogurt with berries
On top of toast with peanut butter
On top of a smoothie bowl
On top of oatmeal
Feel free to dance while it bakes.
