Chocolate Quinoa

Who doesn't want chocolate for breakfast? Especially when it's full of protein and fiber!

This chocolate quinoa makes me feel like a kid again! It reminds me of cocoa puffs... but this is actually a satisfying breakfast that gives me sustained energy and keeps me full. It's a great recipe to make ahead of time. Keep it in the fridge and warm it up in the morning!


Ingredients

  • 1 cup quinoa

  • 2 cups milk (unsweetened almond milk or any other kind)

  • 2-3 Tbsp cocoa powder

  • 2-3 tbsp maple syrup

  • 1/2 tsp vanilla

Lots of toppings such as banana, berries, nuts, granola, peanut butter, or coconut flakes.


Directions

1. Combine quinoa and milk in a pot on the stove.

2. Bring it to a boil over medium-high heat.

3. Turn the heat to low, place a lid on top, and let simmer for 10-15 minutes or until milk is absorbed.

4. Remove from heat and let stand with lid on for 5 minutes.

5. Stir in cocoa powder, maple syrup, and vanilla.

6. Add toppings and enjoy warm!


Store in the fridge and warm up in microwave or on the stove. You may want to add a splash more of milk when reheating.
