Loaded Cauliflower Nachos

Easy to make in less than 30 minutes! Gluten free, dairy free, & meat free.



You won't even miss the meat, cheese, or chips which normally accompany nachos, and you'll feel much better after eating these! Hint: top with avocado or guacamole to add the creamy texture that cheese usually brings.




Ingredients

  • 1 head of cauliflower

  • 1 green pepper

  • 1/2 red onion

  • 1 can of black beans

  • 1 cup of corn (frozen or canned)

  • Taco seasoning

Optional Toppings

  • Guacamole or avocado

  • Salsa

  • Jalapeños

  • Tomatoes



Directions

  1. Preheat oven to 425°

  2. Slice the head of cauliflower in rows about 1 cm thick

  3. Toss the cauliflower pieces in vegetable broth, enough to coat each, and taco seasoning so each piece is covered

  4. Bake the cauliflower for 20 minutes

  5. While the cauliflower bakes, dice green pepper and red onion. Rinse and drain black beans. Prepare guacamole

  6. After cauliflower has baked for 10 minutes, add green pepper, red onion, black beans and corn on top and bake 10 more minutes

  7. Remove from oven and top with guacamole, jalapeños, salsa, and/or tomatoes. Enjoy!
