Extremely flexible and easy. Our go to recipe.

The idea of this recipe is simple and it's meant to be flexible: buy whatever produce you want (I buy whatever is cheap or on sale). Roast the veggies and serve them with a whole grain. Top with hummus and balsamic glaze.
Remember those "choose your own adventure" books. Well this is like a "choose your own meal" recipe. Mix and match veggies, whole grains, and toppings for a new adventure each time.
Possible Ingredients
Veggies: sweet potatoes, broccoli, red onion, carrots, asparagus, bell pepper, brussels sprouts, cauliflower, and/or cherry tomatoes.
Whole grains: Brown rice, quinoa, and/or couscous.
Toppings: hummus and/or balsamic glaze
Directions
1. Preheat oven to 450°
2. Wash and cut all veggies to roughly the same size and place in a bowl.
2. Toss veggies in balsamic vinegar (and veggie broth if needed), enough so the veggies are all coated and are not dry. Season with garlic, salt, and pepper to taste.
3. Place veggies on a baking sheet (use a nonstick mat or parchment paper to prevent sticking).
4. Roast veggies at 450° for 35 minutes or till tender (check after 20 minutes to make sure they are not sticking, add more balsamic or broth if needed).
5. While veggies roast, prepare your choice of whole grain.
6. Add grains and roasted veggies to a bowl. Top with hummus and balsamic glaze (Trader Joe's balsamic glaze is delicious on everything).
Option: stir the hummus in to make it a creamy dish!
